Why does the cafe and rs have different settings? When they have same suspensions.

nobody knows.
But the stock settings suck anyway, so go with your own (or the settings posted on this forum by member “forks-by-matt”, those are a really good starting point/base setting

Rebound = 1.5 turns out from closed
Compression = full open
Preload 14 turns in = 37 sag
Shock 9 threads showing = 44 sag
Rebound= 1.5 turns out from closed
This seem much better than stock I have the cafe model

The essential data here is missing
What is your weight ?
Sag is obviously weight dependent
Where do you ride (climate )
Where do you ride (roads)
Do you carry a pillion)
Do you do track days
Are you normally , a slow medium or racer?

200lb. No track days. The street is my track. I ride it kinda hard no passengers
Streets are pretty good here in  Richmond va USA

So far - a couple hundred miles on mostly twisty back roads, I found the suspension on my Cafe as delivered to work fine for me - 160 pounds plus riding gear.  BUT, I haven't actually checked to see what the settings are.  SO although I assume they are the factory Cafe settings, I don't know that for sure.

We're about to head out on a ride...maybe I'll check them.  DUH!
